The cowpea (Vigna unguiculata) is an annual herbaceous legume from the genus Vigna. Due to its tolerance for sandy soil and low rainfall, it is an important crop in the semi-arid regions across Africa and other countries. Four subspecies of cowpea are recognized, of which three are cultivated.
This food is low in Saturated Fat and Sodium and very low in Cholesterol. It is also a good source of Protein and Niacin, and a very good source of Vitamin A, Vitamin C, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Potassium, Copper and Manganese.
